This restaurant is owned by Mr Higuma who is a Japanese and he still cooks himself though he gets some Chinese chefs to cook as well. I would say the flavour is very authentic and the decoration and atmosphere is just as same as you can see in Japan if compared to the popular, low-priced ramen restaurants in Japan. Hot and greast air, noisy and crammed surrounding, it is just the replca of any small, cosy and popular ramen store you can find in Japan.
The price is also very cheap and reasonable in Paris. There are always lots of Japanese flocks into Higuma to enjoy the taste of hometown (not only the food but also the ambience there).
Couldn't understand why people say it is not authentic......
