Alain Dutournier uses authentic ingredients from first rate producers in his cuisine. The décor of the restaurant reflects his interest in bull fights. Sample menu options include pheasant consommé dotted with chestnuts; foie gras spread on warm cornbread; Pauillac lamb in a tight, sapid jus; a robust garbure (cabbage soup) with duck confit; and more. The cellar harbors a multitude of wines "accented with all the grand Bordeaux and dotted with some unforgettable Jurançons and Armagnacs."
